In Taos for an Association meeting on the 29th. The entertainment on Saturday evening was also enjoyable. It was nice not having to leave the hotel to go look for another restaurant or place to relax in the evening after my meeting. Front desk was excellent service, breakfast guy was on top of things, but the rooms cleanliness not the best. Comforter had stains on it and a dingy white.

This place has a limited gf menu. It would be ok for someone that is sensitive to gluten. Not Celiac friendly. They show that their fries and chips are gf. But, they are made in a shared fryer. The staff don't seem that knowledgeable.

Inexpensive appetizers as well. I would definitely come back.

Hearing of the popular new culinary trend that was sweeping the states called Southwestern cooking, we ventured to hop on the bandwagon and introduce the cuisine and concept Down Under. I found a chef consultant named Dan Hoyer who headed down to assist us in establishing the authenticity of the food, and Dan was from Taos. As we hatched our plan to thrill the Aussie palates with all things New Mexican, Dan regaled me with tales of the beauty and history of the region while training me in the nuances of the spices—in particular the chiles that define this unique cookery. When I finally visited New Mexico to gather more information for the project, the beauty of the state, and specifically Taos, was everything Dan had described and more. Jump ahead to and my return stateside.

We had green Chile stew, salmon fettuccini, and a gorge burger. Tia ordered a la carte for me three cheese enchiladas, rice, beans, etc. Tia apologized, said Had not been here in many years, but remembered it as a nice place for lunch in Taos.. While the name has changed, the food and atmosphere are still great. Ate outdoors on the second floor so it overlooks the plaza. The service was excellent and

The restaurant inhabits the location that once housed Ogilvies, long a Taos Institution. Keith and Kevin Roessler, the twin brothers who together with their wives , are the force behind Parcht and the Gorge, spent many summers working for their uncle, who at one time, owned a chain of restaurants throughout the region, called Olgilvies , here in Taos. Executive Chef Jaime Nieves-Flores grew up in Mexico City but has lived and worked in the states for over three decades. For many of those years he worked for Roger Roessler, opening his Ogilvies chain and opening Seasons in Albuquerque before taking the aforementioned corporate position. Lucas agreed.
