For the past 18 years, I have worked on creating the best mix of ingredients and recipes, of this amazing traditional street food of Mexico, and to bring it to the public. In I moved to San Antonio, Texas. I took on a program in Culinary Arts to expand my horizon on recipes, formulas, dishes, and putting all of my gastronomic and culinary experience to work, and to adapt the traditional Mexican Street Food to Texas. While there, I gained true hands on experience in the art of mixing and combining ingredients with the tortilla product. I was given an opportunity to take on a leading role, to create the dishes I had dreamed of providing to the public, starting with the State of Jalisco, Mexico's traditional street food, the famous Torta Ahogada with pork. Since taking on the role at Ro-Ho, I have been working hard to position the Ro-Ho brand name, not just for brand recognition, but more importantly to be known as a place where customers can have a unique eating experience and truly taste the flavors of traditional Mexican Street Food.

Alonso Carillo squeezes lime juice on his torta ahogada. The torta ahogada dish is made with birote, a thick, crunchy bread with a soft interior, which is specific to the Jalisco region. The spiciness of the sauce depends on the establishment, but patrons who like it spicy can usually ask for an even hotter sauce to pour on their torta on the side.
